Absolutely fabulous flavor and texture
We started eating this pasta due to my son's gluten sensitivity. We've come to love it so we have 6 boxes delivered once a month. The boxes are smaller (8 oz.) than traditional pasta that you buy in the grocery store, and it's more expensive, due to the fact that it costs more to make gluten free products. However, it's also healthier in my opinion and therefore worth it, because it contains green lentils; every 1 cup (cooked) serving has 12 grams of protein! One curious thing is that early on when we started buying it, cooking it 9 minutes was perfect. But at some point, we found we needed to cook it 11 minutes. Lentil pasta is not real good to eat at "al dente." But we don't like our pasta mushy. Even so, we now cook it for 11 minutes at a simmer and find it to be perfect that way. So, I would disregard the instructions on the box. The red lentil takes even longer. Since I don't believe our tastes on pasta have changed; rather I believe the company has changed the way they make it, but they haven't updated the directions.

Extremely Versatile
These can be made el dente or soft. They pair nicely with anything where pasta would be used. They can even be cooked in an Instantpot although I have a hard time getting the water ratio right for a partial box. The nutrition profile is excellent, and they contain just one ingredient which is great.

Best Brand Of Lentil Pasta I've Tried - Lower Carbs & No Tired Feeling!
I'm very happy with the Explore brand of lentil pasta, in fact it is the only brand I buy now. I started to experiment with different brands of "alternative" pasta in an effort to lower my carb intake at the advice of my doctor. I can definitely feel a difference when I eat lentil or mung bean pasta - I don't get that sleepy feeling right after eating it, as one tends to get after eating a bowl of regular wheat pasta. The lower carb content compared to wheat pasta really seems to male a difference.So I tried Tolerant brand as well but find it too mealy. Other store brands were also not nearly as good as the Explore Cuisine, they either fell apart or were mushy. So I keep coming back to it, and have my cupboard stocked with the green lentil penne, the red lentil penne & spaghetti, and the mung bean rotini. (I did however hate the black bean spaghetti and ended up giving that away).You can't go wrong with the Explore Cuisine. It is very comparable to wheat pasta although there is a slight difference in that it is a little bit more chewy but not much more. I make it with tomato paste and Bar harbor chopped clams. Delizioso!

Recipe changed. Decreased quality
I’m beyond disappointed and angry. This pasta was different and better than any chickpea pasta on the market. It made me a loyal customer for years. I ate this at least twice a week. Now their recipe has changed (does not include tapioca starch and pea protein) which made it sub par just like it’s competitors. It tastes bland and it falls apart easily while cooking and turns into a big glob of pasta rather than individual separated tasty noodles. You’re better off saving your money and buying a cheaper brand. Sadly I will no longer be a customer after so many years of enjoying this product.

Flavor good
I have tried several bean pasta in a favorite recipe. They all break apart with stirring. This one less so. It has the best flavor. Dish wasntastier using this pasta.

Great protein, no funky texture
I recently shifted to mostly vegetarian and needed more options for protein. These are great! I do not like beans and have tried other bean type pastas and mostly dont care for the texture. But these do not have an off putting flavor or texture. Much better than other chickpea pasta, such as Banza. I will happily replace all pasta with these. They are somewhat expensive considering pasta is cheap, but worth it for the protein. Love it!

Truly low carb with minimal bg elevation.
I ordered this product two separate times - about a week apart. The first delivery was as described. Six 8 oz packs in one box for under $7. The 2nd time around, the price went up to a bit over $7. I ordered 10. Instead of the 10 boxes of 6 packets each, I only received 10 individual packets. Mispricing from someone? Who should step up to honor what was advertised? Big booboo. The expiration date is also only just so-so. Late November of 2021.Aside from this huge misstep; this is a great product. The flavor is forward. Only a minimal rise in blood glucose from one serving of 2 ozs. I only cooked it 2 minutes and rinse in cold water. I actually gently rub the noodles together to rid more of the starches, and therefore lessen some of the gumminess that can develop. The black bean variety is best cooked for no more than 3 minutes. Check often as it cooks. I like it tossed with garlic and olive oil. Heavy sauces seems to just weght it down. Saute the slightly under al dente cooked noodles with veges is another way to enjoy the noodles. Again, this is not the pasta we are use to indulging in. It does, however, fill a void for those on low carb, keto and or a diabetic.I have tried many dried low carb pastas; 7 types so far, all raise my blood sugar a lot. Since "pastas" affects blood glucose on individuals differently, the only way to be sure is to test after ingestion.Fuzzy labeling of ingredients is widely used. Look into the ingredients and you will find that, for instance, the fiber ingredient listed is often really debatable.I would order this product through the Explore Cuisine web site. More variety, better pricing and a much longer expiration date.Very hard to rate this. A rating of 5 stars for flavor, 1 star for the all the missteps. Hope this review help.

Convenient Meal Prep with Good Macros
Bought these to use when I don’t have time to do a full meal prep for the week. Great substitute for standard pasta with a much better macro profile. Usually pair it with a vodka sauce or red sauce with pepper, onions, and mushrooms. Tastes great.

Lentil pasta
I love the taste of this pasta you Can make so many dishes different ways of flavor that comes off with these just enhances the meal.

The only lentil pasta I like!
I've tried many but THIS is my favourite because it has the most "real pasta" like texture. Make sure to follow cooking directions exactly- one minute longer ruins it!

Good product, small package
First time using a pasta other than wheat. Was great with my homemade pasta sauce. Smells very different when cooking.
