I use them all the time for added umami.
These are very good. I’m a bit spoiled, used to tin, rather can, my own from fresh. Here in rural Indiana, that’s not happening. I use 2/3 just last night in a Clam Linguine. I use them, like Anthony Bourdain’s in Lasagna. It’s the umami I’m after, these work, not overly fishy at all!!!

Nice treat
Single butterflied filet. Firmish texture. Fills the room with kipper smell. I like them on a sandwich with chipotle mayo.

As an anchovy connoisseur, there are other selections that may satisfy better in eating whole by itself. Roland was fine mixed into food or laying on a pizza.
